Turkey Burgers with Courgette

This is a perfect summer meal idea. It's really basic but tasty, with lovely fresh ingredients. You can either cook the burgers in a frying pan, grill them, or you could put them on the BBQ for a healthier change to the usual beefburgers.
You could also replace the minced turkey for Quorn mince for a yummy veggie option!

Turkey Burgers with Courgette

INGREDIENTS:

150g grated courgette (when squeezed 120g)
450g lean minced turkey
25g seasoned whole wheat breadcrumbs
1 clove garlic, grated
1 tbsp grated red onion
1 tsp salt and fresh pepper
oil spray

DIRECTIONS:
  1. Squeeze all the moisture from the courgette with paper towels. 
  2. In a large bowl, combine minced turkey, courgette, breadcrumbs, garlic, onion, salt and pepper.
  3. Make 5 equal patties (130g each), not too thick so they cook in the center. 
  4. To cook indoors: Heat a large nonstick skillet/frying pan on high heat. When hot, lightly spray oil. Add burgers to the pan and reduce the heat to low. Cook on one side until browned, then flip. Flip over a few times to prevent burning and to make sure the burgers are cooked all the way through.
  5. If grilling: Clean grill well before cooking and spray with oil spray to prevent sticking. Cook the burgers on medium heat about 5 minutes on each side, or until no longer pink in the center.
Serve on wholemeal rolls and with a big green salad!
