Tomato and Chickpea Soup

I just love the simplicity of this soup. t's so quick and easy to make and tastes lovely. It freezes perfectly so make up a big batch, portion it out and store in the freezer until you want some for your lunch. Just heat it up in the microwave!


Tomato and Chickpea Soup

Ingredients
2 tins chopped tomatoes
1 tin chickpeas
1 tsp garlic powder
1 tbsp smoked paprika
Handful chopped coriander

Method:
  1. Put everything into a saucepan (even the liquid from the chickpeas).
  2. Simmer until it’s a soup-like consistency.
  3. Portion out into 3 containers.
  4. Store in the fridge or freezer.
Easy!
